| Michel Torino's vineyards in Salta, Cafayate, are among the highest in the world; 1,700m above sea level, basking in splendid isolation surrounded by desert and breathtaking mountain scenery. Harvest is manual and the juice goes through pre-fermentation maceration at a cold temperature to extract the maximum color and fruit while softening the tannins. Finally, 30% of the wine get a delicate and subtle contribution of both American and French oak during 6 months, gaining a touch of complexity.
